After creating the text file with a different color contour effect added, you want to remove the LINE fill on the Text by sliding the transparency bar to the left.
Next, select the file and select Shaping/Break Apart by Color.
Next, select each layer and select Shaping/Back Minus Front. This will remove the background layer behind the text fill and give you the trapped technique you are looking for.
